Vegan Saskatoon Berry Pie Recipe

Ingredients
For the Double Crust:
2 ½ cups all-purpose flour
1 tsp salt
1 tsp sugar
1 cup coconut oil or vegan butter, solid
6-8 tbsp cold water
For the Filling:
4 cups fresh or frozen Saskatoon berries
¾ cup sugar (adjust based on sweetness preference)
¼ cup cornstarch or tapioca starch
1 tsp vanilla extract
1 tsp lemon juice
¼ tsp cinnamon (optional)
Instructions
Preparing the Crust:
In a large bowl, mix the flour, salt, and sugar together.
Add the solid coconut oil or vegan butter and mix until the mixture resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, mixing until the dough holds together without being sticky.
Divide the dough into two equal portions, shape them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preparing the Filling:
In a medium bowl, combine the Saskatoon berries, sugar, cornstarch, vanilla extract, lemon juice, and cinnamon. Stir gently to combine and set aside.
Assembling the Pie:
Preheat your oven to 375°F (190°C).
On a floured surface, roll out one disc of dough to fit your pie pan. Place it in the pan, trimming any excess overhang.
Pour the Saskatoon berry filling into the crust, spreading it evenly.
Roll out the second disc of dough and place it over the filling. You can either cut slits for a lattice top or simply cover it completely. Seal the edges by crimping them together.
