Lentil-Based Shepherd's Pie Recipe

Ingredients


For the Lentil Filling:

  • 1 cup dry green or brown lentils, rinsed and drained OR 1 can pre-cooked lentils

  • 2 tablespoons olive oil

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 garlic cloves, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 2 tablespoons tomato paste

  • 1 tablespoon soy sauce or tamari

  • 2 cups vegetable broth

  • 1 cup frozen peas

  • Salt and pepper to taste

For the Mashed Potato Topping:

  • 4 large potatoes, peeled and diced

  • 1/4 cup plant-based milk

  • 2 tablespoons vegan butter

  • Salt and pepper to taste

Instructions

1. Prepare the Lentil Filling:

  1. In a large pot, add the lentils and cover with water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender. Drain and set aside. Skip this step if using canned lentils.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for about 5-7 minutes until softened.

  3. Add the garlic and mushrooms, cooking for another 3-4 minutes until the mushrooms are tender.

  4. Stir in the thyme, rosemary, tomato paste, and soy sauce. Cook for 2 minutes.

  5. Add the cooked lentils and vegetable broth. Bring to a simmer and cook for about 10 minutes, allowing the mixture to thicken. Stir in the peas and season with salt and pepper to taste.

2. Make the Mashed Potato Topping:

  1. In a large pot, boil the diced potatoes in salted water until tender, about 15-20 minutes.

  2. Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy.

3. Assemble the Shepherd's Pie:

  1. Preheat your oven to 400°F (200°C).

  2. Spread the lentil filling evenly in the bottom of a baking dish.

  3. Top the lentil mixture with the mashed potatoes, spreading it out evenly.

  4. Use a fork to create texture on the surface of the mashed potatoes, which will help it brown.

4. Bake:

  1. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.

  2. Let it cool for a few minutes before serving.
